Holy New Missouri Brewery

Seems there is a new brewery coming to Missouri.  Cathedral Square Brewery is going to be centralized around St. Louis, however the beer is brewed in Weston.  Safe bet that this is a contract brew for Weston Brewing Co.

The two labels approved show a Belgian-Style White Ale and a Belgian-Style Abbey Ale.  An interesting note on the Abbey is that it is brewed with "authentic Belgian Trappist yeast."  It doesn't say which Trappist brewery, but that's kind of cool any way

  1. The last place I would want to brew my beer would be Weston. They have an infection problem in many of their beers and I wouldnt want my contracted beer to pick that up.

  2. I'm hoping a lot of that was fixed when they installed the new pasteurization unit earlier this year, but it's hard to rebuild after an infection like that. I know they've been doing a lot of contract brewing lately, Flying Monkey comes to mind, and I think there was something else out of IL

  3. Good to know, thanks for the reporting! With so many disappointments in local brewing (Dead Canary, which is clearly dead, Doodle or whatever that one was, etc) it'd be nice to see something actually take off and work.

  4. I also hear there is possibly something in the works for a new West Bottoms located brewery! Not sure of details or how serious this is, but it would be cool. Of course, I will probably wait until the doors open or I buy one their beers in the liquor store to get truly excited.

  5. I think you are referring to Dead Canary Brewing. They were supposed to open up in the West Bottoms, but they havne't posted any updates since January. I hope it happens, but I'm not holding my breath. Starting up a new business in this economy is tough going
